The Ember Room was built on a simple belief: great beef, handled with patience, needs nothing else to prove itself.

We source exclusively from Canadian and American heritage farms, dry-age in-house for a minimum of 35 days, and cook over hardwood ember at temperatures most kitchens won't commit to. Every plate that leaves this kitchen is the result of decisions made weeks before you sat down.

Our dining room seats 48. We keep it that way on purpose.
